In a large dutch oven, over medium heat, add the olive oil and ground turkey. Cook for 5 minutes, breaking the meat into small pieces.
Add the leek and sauté until slightly browned, about 5 minutes.
Add the rest of the ingredients, stir well to mix, and bring to a boil.
Reduce heat to low and simmer, covered, for 30 minutes. Adjust seasoning to taste before serving piping hot!
