Toss the quartered tomatoes and kosher salt in a colander.
Balance the colander over a large bowl and let the tomatoes “sweat” for 30 minutes. You want the juices to drain off the tomatoes.
Discard the tomato juices and transfer the tomatoes to the large bowl.
Whisk together the white balsamic vinegar and olive oil. Pour over the tomatoes and toss to combine.
Add the torn burrata and basil leaves. Season with cracked pepper. Toss to combine.
Spoon onto a slice of toasted baguette + Enjoy!
