In a medium bowl, whisk together the almond milk and matcha powder until the powder is dissolved.
Add the sugar, vanilla bean paste and salt. Whisk until combined.
Add the eggs and whisk until smooth and creamy.
Pour the mixture into a shallow baking dish.
Dip the bread slices in the matcha mixture until well coated.
In a skillet, melt about 1/2 t butter over medium heat.
Add the bread slices and cook, flipping once, until browned on both sides.
Dust with ground cinnamon and serve immediately.
