Place the chia seeds in a medium bowl.
In a small saucepan, over medium heat, whisk together the almond milk, matcha powder, honey, ground cinnamon and vanilla bean paste until the matcha powder and cinnamon are completely dissolved.
Pour the matcha mixture over the chia seeds and whisk to combine.
Cover and refrigerate overnight. Garnish with fruit, a drizzle of honey and a dusting of cinnamon before serving.
