In a small bowl, add the diced peach, ginger, lime juice and a dash of sea salt and ground pepper. Mix to combine. Set aside.
In a large skillet, over medium-high heat, heat the olive oil. Add the ground lamb and cook for 3 minutes, breaking up any large pieces.
Add the peach mixture, mix to combine and cook for another 2 minutes. Remove from heat.
In a small bowl, whisk together the tzatziki and yogurt.
Spread the yogurt mixture over the flatbread, top with the lamb mixture and garnish with green chilis and microgreens.
