Preheat oven to 250 degrees. Line your baking sheets with parchment paper.
Using a mandolin, slice the pears lengthwise into thin pieces.
Place the slices on the prepared baking sheets.
Bake for 1 hour. Flip the pears and bake for another 45 minutes to an hour or until the pears are crispy and golden around the edges.
Remove from oven and transfer to wire racks to cool.
