Preheat oven to 400 degrees. Line two baking sheets with parchment paper. Set aside.
In the bowl of a standing mixer, mix the cold butter and sugars together until combined on medium speed.
Add the eggs, one at a time, mixing well between each addition.
Add vanilla bean paste. Mix until incorporated.
Add the flour, corn starch and baking soda. Mix to combine.
Fold in the chocolate chips.
Using an ice cream scoop, place dough balls equal distance apart on the prepared baking sheets.
Bake for 8 - 9 minutes until slightly golden. Cool on wire racks or enjoy warm!
