Preheat oven to 350 degrees.
Combine peaches, raw cane sugar, bourbon and cinnamon in a bowl and set aside to marinate while the oven preheats.
When the oven is ready, place the pie dough on a parchment lined, rimmed baking sheet.
Top the dough with the fruit mixture, leaving a 1 inch border. Pinch the dough edges to get a rippled/wavy effect. Sprinkle with raw cane sugar.
Bake for 28 - 30 minutes or until the galette is cooked and slightly golden.
Dust with powdered sugar or serve with your favorite ice cream. Enjoy immediately!
