Preheat oven to 450 degrees.
Arrange the vegetables in the bottom of a baking dish. Top with the chicken breasts, skin side up.
Whisk together the white balsamic vinegar and 2 T olive oil.
Pour over the chicken and vegetables. Drizzle with additional olive oil if it seems to dry.
Season generously with sea salt and ground pepper.
Roast for 45 minutes. Enjoy immediately!
