Place the sliced apples in cold water with the lemon juice and set aside. This will slow oxidation and keep them from turning brown quickly.
Add the goat cheese, half + half, honey, pepper and sea salt to a mixing bowl.
Using a hand held or standing mixer, mix the ingredients until combined at low speed. Turn the mixer speed to medium-high and whip until light and creamy, about 2 minutes.
Transfer the whipped goat cheese to a serving bowl. Serve with sliced apples and a variety of crackers.
This appetizer can be made ahead of time and refrigerated until ready to use. Best enjoyed slightly chilled.
