Preheat oven to 450 degrees. Line a rimmed baking sheet with parchment paper.
In a large bowl, whisk together the chicken stock, olive oil and lemon juice. Add the potatoes and toss well to coat.
Transfer the potatoes and juice to the prepared baking sheet. Sprinkle with Herbs de Provence.
Roast the potatoes for 45 - 55 minutes until browned and crispy.
Sprinkle with ground pepper and sea salt, to taste. Transfer to a serving dish and serve warm.
