Preheat oven to 350 degrees. Line a large cast-iron skillet with parchment paper. Set aside.
In a medium pan, over medium heat, whisk together the honey, dark brown sugar, salt and cinnamon until the honey is melted and ingredients are well combined.
Add the peanuts and toss until well coated. Transfer to the prepared cast-iron skillet.
Bake for 30 minutes until the peanuts are golden brown and toasted.
Remove from oven and let cool in the skillet for 30 minutes. Break the peanuts into clusters and cool completely. Store in an airtight container for up to 2 weeks.
Use your favorite gourmet sea salt to make this recipe unique. I love the smoky spiciness of the savory salt I used in this recipe.
