Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Set aside.
In the bowl of a standing mixer, mix the cold butter and sugars together until combined on medium speed.
Add the eggs, one at a time, mixing well between each addition.
Add vanilla bean paste.
Add the flour, corn starch and baking soda. Mix to combine.
Using an ice cream scoop, place 1 T size dough balls equal distance apart on the prepared baking sheets.
Dip each dough ball into a bowl of M&M’s, pressing so the candy sticks. Place the dough balls, M&M’s side up, back on the baking sheets.
Bake for 10 - 12 minutes until slightly golden.
Cool on wire racks or enjoy warm!
