Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside.
In a small bowl, sift together the flour and baking soda. Set aside.
In the bowl of a standing mixer, cream the butter and sugars at medium speed until light and fluffy, about 3 minutes.
Add the eggs and vanilla bean paste and continue mixing until thoroughly combined.
Reduce speed to low. Add the sifted flour and baking soda. Mix until well combined.
Remove from the standing mixer and fold in the chocolate discs and coconut flakes.
Using an ice cream scoop, place the rounded dough balls on the prepared baking sheet.
Bake for 10 minutes. Remove from oven and place on wire racks to cool.
