Preheat oven to 325 degrees. Grease a 12-capacity muffin tin and set aside.
Add the flour, baking soda and sea salt to a small bowl. Whisk to combine.
Add the pieces of butter to a small saucepan. Melt it over medium heat, whisking for about 5 minutes until browned and nutty smelling. Remove from heat. Allow to cool for a few minutes.
In the bowl of a standing mixer, add the sugar and brown butter. Mix on low speed until combined.
Add the honey, mashed bananas, eggs, sour cream and vanilla bean paste. Continue mixing until combined.
Add the flour mixture and mix until smooth.
Spoon the batter into the prepared muffin tins.
To make the caramelized bananas, melt the butter in a large sauté pan. Add the banana slices in one layer. Cook until caramelized on one side. Gently turn the bananas to caramelized the other side. Sprinkle with sea salt and drizzle with honey.
Spoon the caramelized bananas over the muffin batter. Bake for 25 minutes or until browned and cooked through.
