In a large bowl, toss together the shrimp, parsley, tomatoes and garlic. Season generously with sea salt and cracked pepper. Drizzle with half of the olive oil and toss to combine.
Prepare the pasta according to package instructions.
While the pasta is cooking, prepare the shrimp scampi. Heat the remaining olive oil in a large skillet over medium-high heat.
Add the shrimp mixture and sauté, stirring frequently, for about 8 minutes or until the shrimp are cooked through.
Remove from heat and add the lemon juice. Toss to combine.
Divide the pasta between four pasta bowls and top with the shrimp scampi. Serve immediately.
